Vegetarian Cakes Biscuits

Almond Cookies (gluten free)

You can substitute up to 50% chickpea flour to replace almond flour

1 egg
1.5 tsp almond essence
125 g sugar
Whisk until smooth and creamy
175 g almond flour
1 tsp baking powder
1 pinch salt
Mix the dry ingredients
Add to egg mixture a little at a time and mix well
Leave in fridge to a couple of hours
You can freeze the mixture now: defrost slowly when needed
heat the oven to 180C
Line baking trays with greaseproof paper
Take a teaspoonfull of dough and roll into a ~2cm ball
Put the balls on the tray ~5cm apart
Put the tray in the oven for 10 minutes or until they start to colour
